My background is in the nutritional sciences and would like to share a good resource that I found from the Oregon State University Linus Pauling Institute. http://lpi.oregonstate.edu/infocenter/# Click here
They cover such subjects as vitamins, minerals, nutrients (other), phytochemicals, cognitive function, inflammation, immunity and a whole host of other good information.
The Linus Pauling Institute's mission is to:
Determine the function and role of vitamins and essential minerals (micronutrients) and chemicals from plants (phytochemicals) in promoting optimum health and preventing or treating disease
Determine the role of oxidative stress and inflammation in human health and disease, and the protective effects of dietary factors with antioxidant or anti-inflammatory properties
Help people everywhere achieve a healthy and productive life, full of vitality, with minimal suffering, and free of cancer and other debilitating diseases
